“The Beverly” Cocktail

The recent opening of the new Waldorf Astoria Beverly Hills inspired our Director of Beverage, Eric Hammer, to create a new featured cocktail, “The Beverly,” our take on the Ginger Margarita. This cocktail is perfect to sip on while enjoying a day on the beach in the South Florida sun or as an after-dinner-drink at our craft cocktail bar, the Monkey Bar. “The Beverly” is made with muddled fresh ginger, fresh Florida citrus, Casa Dragones Blanco Tequila, Combier Liqueur, and topped with a chili and ginger lime foam.

Recipe: The Beverly
1 ½ oz Casa Dragones Blanco
1 oz Combier Liquor
1 ½ oz house-made sour mix
Muddle 2 slices of peeled, fresh ginger
½ of 1 lime, juiced
Spiced ginger lime foam

Place ginger into mixing glass, add juice from lime and muddle. Combine all ingredients and shake vigorously 20 times and strain into Glass. Top with spiced ginger lime foam and lime zest

Boca House Made Sour Mix:
20 oz fresh squeezed lemon juice
4 oz fresh squeezed lime juice
8 oz fresh squeezed orange juice
15 oz simple syrup (equal parts sugar and water)
Pass through a fine strainer

Spiced Ginger Lime Foam:
4 oz of sliced fresh ginger
1.5 cups of sugar
1 cup of water
1 oz soy lecithin
1 full lime zested
1 chili (de-stemmed and seedless)

Add ginger to water bring to boil. Add chili, sugar and lime zest. Heat until sugar is completely dissolved. Cool and then add soy lecithin. Put into SI canister add two cartridges of nitrogen. Shake, serve and ENJOY!
